Inspired by my favorite sauce – tikka masala – and wanting to get rid of some leftover naan, in less than twenty minutes I ended up crafting an Indian style pizza out of a take out staple. Viva la sauce!

Chicken Tikka Masala Pizza
Ingredients
- 4 slices naan
- 2 cups shredded mozzarella cheese
- 1 cup cilantro chopped and divided
- 2 large chicken breasts
- 1 tbsp butter
- 1 tsp salt
- 1 tsp ground black pepper
For the sauce
- 1 tbsp vegetable oil
- 4 cloves garlic minced
- 2 cups tomato puree
- 1 cup plain yogurt heavy cream, or coconut milk
- 1 1/2 tbsp sugar
- 1 tbsp red pepper flakes
- 2 tsp garam masala
- 2 tsp curry powder
- 2 tsp salt
- 1 tsp ground ginger
- 1 tsp ground black pepper
Instructions
- To prepare chicken, slice chicken breasts into 1 inch cubes. Melt butter in a saute pan. Add in chicken cubes, salt and pepper, and lightly saute chicken for 2 minutes. Remove from heat and set aside.
- To prepare the sauce, saute minced garlic in heated vegetable oil for 30 seconds until golden and crispy. Add in tomato puree, white sauce of your choosing, sugar, red pepper flakes, garam masala, curry, salt, ginger, black pepper and 1/2 cup of chopped cilantro. Stir over medium heat until evenly mixed, about 3 minutes. Remove from heat.
- Preheat oven to 400 degrees. Place naan on baking sheet.
- Spread 2-3 tbsp of tikka masala sauce over naan, leaving about a 1/2 inch crust.
- Add sauteed chicken.
- Sprinkle mozzarella cheese over chicken. Bake for 15 minutes.
- Remove from oven and cool for 5 minutes. Garnish with remaining chopped cilantro.
